Chicken Marsala
This chicken comes together fast, only requires one pan, and is keto friendly. For the chicken you can flatten out the meat to tenderize it, but I find that using boneless chicken thighs results in a juicier and more satisfying dish.
Ingredients:
- 1 lb boneless chicken thighs
- 2 cups of sliced cremini/shitake mushrooms
- 1/4 cup Marsala wine
- 2 tbsp butter
- 1/4 cup heavy cream
- 2 tbsp minced garlic
- 1/4 cup finely chopped onion
- 1/4 tsp Kinders prime rib seasoning
- 1 tsp thyme
- Pinch of chicken bouillon
Season both sides of the chicken with Kinders seasoning and pan fry until golden brown on both sides. It should take about 20 minutes on medium heat. Set aside the chicken. In the same pan saute the garlic and onions for 2 minutes. Next, add the mushrooms and saute for 2 minutes. Add the Marsala and cook off the alcohol for one minute. Next, add the butter and heavy cream. Add a pinch of chicken bouillon and thyme then taste for salt. Serve with pasta or your favorite veg.
