Calamansi Zucchini Bread
Calamansi is a Filipino citrus fruit that tastes like an orange and a lemon had a baby together.
I have been spoiled by my kind neighbors because of their over abundance of zucchini from their yard. I had a big bag of calamansi sitting in the fridge just waiting to be used. It was my calling to make a zucchini loaf. My son helped me make this bread and he LOVES it. It is the best way to sneak that veg in.
Ingredients:
Bread:
- 2 cups finely grated zucchini
- 1 cup vegetable oil
- 6 oz yogurt
- 1 tbsp calamansi juice
- 3 eggs
- 2 cups sugar
- 3 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 2.5 tsp calamansi zest
- 1 tsp salt
- 1 tsp vanilla extract
Glaze:
- 1 cup whole milk
- 1/2 sugar
- 1/4 cup calamansi juice
For the bread:
Preheat oven to 350 degrees. Finely grate a large zucchini in your food processor. Set aside.
In a bowl, combine the eggs, oil, yogurt, calamansi juice, sugar, and vanilla extract. In a separate bowl, combine all of the dry ingredients including the flour, baking powder, baking soda, salt, and calamansi zest. Add the zucchini and dry ingredients to the wet ingredients and mix thoroughly. Pour the batter in 2 greased 8 1/2 by 4 1/2 loaf pans. Bake for 50-55 minutes. Let the bread cool for 30 minutes.
For the glaze:
Combine all of the ingredients in a sauce pan and simmer on medium heat until the consistency is thick like syrup. Pour the glaze over the bread and serve warm.
